*Gluten Free Chicken Marsala*

  • 8 chicken thighs , boneless and skinless
  • 1 tsp of fresh black pepper
  • 4 tbsp of butter unsalted
  • 2 cups of fresh mushrooms , sliced
  • 2 tbsp. of  canola oil
  • 3 teaspoons of minced garlic
  • 2 lbs of Gluten and wheat free pasta
  • 1/2 cup of Marsala wine
  • 1/3 cup of green scallions, basil and rosemary finely chopped
  • Gluten free  and  wheat free flour - to thicken sauce.
Bake chicken in a shallow pan  at 375 degrees for 30 minutes. Sautee sliced mushroom in a medium sauce pan . Slowly add canola oil and the finely chopped herbs( careful to reserve some for later as a garnish* After mixture has rendered incorporate the gluten free flour and Marsala wine until the sauce has reached desired consistency.  In a separate pot bring the gluten and wheat free pasta  to a boil for about 10-12 minutes until al dente. Drain , rinse and serve immediately . Once pasta has been plated , place a ladel full of the Marsala sauce over pasta then with chicken. Grab a knife, fork and some parmesan cheese , Then sit back ,relax and enjoy*

Strawberrry and Mango Sangria Non - Alcoholic

  • diced mangoes
  • 2 cups of orange juice
  • 1/2 cup of lemon juice
  • 2 cups of strawberries
  • 2 cinnamon sticks -optional
  • 1/3 simple syrup.
Combine all ingredients in a blender and serve over ice *

Zucchini Shrimp Surprise and  Slamming  Cucumber Lemonade*

  • The Ingredients to My Zucchini Shrimp surprise
  • 2 whole Zucchini Spiral cut
  • 2 sprigs of cilantro
  • 1 teaspoon of fresh rosemary
  • 2 finely chopped basil leaves
  • 1 1/2 cup of Chicken stock
  • 1 teaspoon crushed red pepper
  • the zest of 1 small lemon
  • 3 pats of real unsalted butter
  • 3 pounds of uncooked shrimp , peeled and deveined
  • Reserve some cilantro, basil and rosemary for a garnish upon completion
 Sautee shrimp until opaque in Olive oil  then add chicken stock. Simmer while adding the rosemary, basil, cilantro . In a small saucepan bring to boil water then add zucchini Cook no more then 2-3 minutes. Drain zucchini pasta  Plate pasta then add the shrimp mixture on top. Garnish with remaining chopped ingredients  .



Slamming Cucumber Lemonade
  • 2 Large cucumbers peeled, chopped and seeded
  • 2 juice of two lemons
  • 1 cup of raw sugar
  • 2 pieces of fresh ginger
  • 1 mint leaf  as a garnish
 Combine ingredients in a gallon of water Place inside of freezer  allow at least an hour to chill . Pour into serving
glasses and Garnish with fresh mint leaves Enjoy

  • If you love Mangoes , Then you absolutely have to try my Decadent Mango smoothie. It's quick ,easy and did I mention DELICIOUS!!

You will need the following ingredients
  • 1 1/2  cups of  chopped mango
  • 1/2 cup of Low fat Vanilla Yogurt
  • 3 ice cubes
  • 1/3 cup of chamomile tea (un-sweetened)
Combine all the Ingredients into the blender and pulse until Smooth.  Serve in a glass and garnish with a sliced Mango*
