Baja Soft Fish Tacos

  • Canola oil, for frying
  • 1/4 red cabbage, green cabbage and carrots thinly sliced (approx. 1 1/2 cups)
  • Juice of 1 lemon
  • 1/2 cup mayonnaise
  • Kosher sea salt
  • 12 flour tortillas
  • Juice of 1 lime
  • 3/4 cup all-purpose flour
  • 1 cup yellow corn meal
  • 1/2 teaspoon complete seasoning
  • Freshly ground black pepper
  • 1 1/4 pounds skinless tilapia fillet, cut into halves
  • 1 cup sour cream

Directions
  • Heat canola oil in a medium sized pot over medium-low heat. Meanwhile, toss the red and green cabbage, lime juice, carrots, sour cream and mayonnaise in a bowl. Season the slaw with kosher sea salt and freshly ground black pepper.
  • Lightly warm the tortillas in a skillet over low heat . Place in covered dish to keep warm.
  • Mix the flour, complete seasoning, yellow corn meal, salt and pepper to taste in a shallow bowl. Submerge the fish into the flour mixture, fry in batches until golden brown Transfer to a paper-towel-lined pan to drain. Season with salt, fresh lemon and lime juice.
  • Fill the tortillas with the fish and slaw. Garnish with fresh lime wedges.

* Veggie Omelette Supreme *

Ingredients for My * Veggie Omelette Supreme* are as follows...
1 teaspoon olive or canola oil
1 chopped red, yellow and green bell pepper
1 chopped onion
1 tablespoon of salsa
1 cup of green scallions
1 cup sliced mushrooms 
3 eggs, beaten
Pinch of Sea salt 
Pinch of fresh black pepper
1 /2 cup of Finely shredded reduced-fat Cheddar cheese

  • In a medium non-stick skillet, add oil and turn heat up to medium-high. Add bell pepper, mushrooms and onions. Cook 2 minutes, stirring often until onions have softened. Stir in spinach, cooking until it wilts. Remove contents of pan and set aside in small container.
  • In a medium bowl, combine eggs, water, salt and pepper whisk well. Reheat previously used skillet over medium-high heat. Promptly pour egg mixture in while sliding skillet back and forth rapidly over heat. Swiftly stir with a spatula to spread eggs steadily over the bottom of skillet as they solidify. Lightly brown the bottom of omelette by keeping heat on for a few seconds. Avoid overcooking as the omelette will continue to cook even after it is folded.
  • Spread sauteed vegetables over half of omelette and sprinkle in some of the cheese. Use a spatula to lay other half of omelette over vegetables. Delicately slide omelette off of pan onto a plate. Garnish with remaining cheese and scallions. Serve and enjoy*

The perfect mate who never disagrees or argues does not exist, however, a mate who speaks their mind, bends but doesn’t break to compromise and/or agrees to disagree does. The perfect mate who communicates everything does not exist but a mate who understands your silence, ignoring him/her or your demeanor when he/she needs them to communicate most does. The perfect mate does not exist who is always right but a mate who doesn’t keep score of who is right or wrong and realizes that you are on the same team encouraging and supporting each other does! Meaning – God is the only perfect being! We are all human, make mistakes and are flawed yet individually unique! The key to finding a perfect mate is finding the one who knows you inside and out, flaws and imperfections but loves you unconditionally anyway, because they know you are imperfect but perfectly made just for them! ~Nikkie Bendross
